Some early music to start the show, beginning with Palestrina's Christmas song ("today Christ is born", first published in 1575) and then a number of older pieces. Most of these are motets (a musical setting of some religious text although they were not always used in a religious context) but a couple are "musica profana", which is how any secular music was described.
