After an unsuccessful but longish hunt for the meaning of "headcoat" I noticed that a pix of Thee Headcoats shows all three wearing hats called 'deerstalkers' -- think Sherlock Holmes. So I infer that "headcoat" is a regionalism (?), or a cute word, for a hat made of fabric.
