I just make a "béchamel", i.e. white sauce of butter and flour, cut up the second (or third) pass at the roast bird, add in carrots (and a potato, this time), and put it between the lazy man's two store-bought pie shells. 10 more minutes...

It just came out: damn good! I finally managed to get the bottom crust to bake properly through being crafty: I kept it frozen, cooled the chicken sauce etc (the filling), but kept out one of the crusts so it'd be soft for the top. I put up the oven a bit higher, 425 for 15-20 minutes. Seems to have done the trick! The crust is really nice now, for store-bought. I'm unreasonably pleased with myself...
